  1. Stir together all ingredients except tortillas in large bowl.
  2. Place about 1 cup filling in center of each warmed tortilla. Fold two opposite edges of tortilla toward center over filling. Roll up open end of tortilla toward opposite edge.
  3. Place on microwave-safe plate, seam-side down. Microwave 2 tortillas on medium-high (70%) power, turning or rearranging after half the time, until heated through (1 to 2 minutes). Repeat with remaining tortillas.
  4. Serve with salsa and sour cream, if desired.
