Super Easy Macaroni Salad

"This is great for someone with little time and money. I couldn't find anything this simple when I was looking so I thought I would add it. You can add or substitute many different things. My sister puts chopped sweet pickles. My grandma would put cucumber and canned crab meat and shrimp instead of ham."

ingredients

  • 2 cups macaroni (I use whatever is in my cupboard)
  • 12 cup cubed cheese (I prefer cheddar or co-jack)
  • 12 cup cubed ham
  • 12 cup Miracle Whip (can sub mayo your choice)
  • 1 tablespoon mustard

directions

  • Cook,drain and rinse macaroni and put in fridge while you dice up cheese and ham.
  • Mix together cold macaroni, cheese, and ham in a bowl.
  • In a separate bowl mix miracle whip and mustard. (If it is too tangy my mom would put a little sugar in it about a tsp.).
  • Mix it all together and chill or serve immediately.

  1. This is a great summer salad! I did add some extras to it. I doubled the macaroni, added colby-jack crumbles, very small diced ham, chopped egg,chopped sweet pickles,mayonnaise and a touch of mustard. I didn't measure, just eyeballed it. Tastes great, makes a huge amount and everyone was inhaling it! Thanks for a great recipe.

  3. It's a nice, basic macaroni salad. I used mayonnaise and added some sugar and vinegar to get the tanginess of Miracle Whip. I thought it was crying out for onions, so I added chopped green onions. They added a nice crunch as well as flavor. I also added salt and pepper. I like the idea of adding cucumber; I'll try that next time. thanx for posting.
     
  4. It is easy. I just add what I have on hand. pickle relish, onion, egg, bell pepper, what ever.

  1. I love making this but also add all together Hard boiled eggs-4,Chicken-precooked shredded Tyson,Macaroni noodles-1 1/2C.,Ham-Diced Deli style, Red New potatoes-6 cubed up into bite size pieces as well as Celery-2 stalks,White onion-Finely diced medium size,Roma Tomatoes-3 diced,& for a little heat either Cayenne Pepper,Hot Sauce or red chili flakes to taste.Also Dill dried or fresh & Dried Chives & banana peppers to taste salt & pepper.Mayo enough to coat & a little lemon juice to freshen it up about 1-2Tablespoons.

I am a wife and mother of an infant son and a crazy 2 year old. I love my life in general. I feel very lucky to have the life I have. I learned how to cook helping my mother and grandmothers in the kitchen it was something I will always remember fondly about my childhood and something I will be doing with my children! Although my experimenting didn't start until I was in college living with 2 very good cooks (believe it or not they were both men).
