Super Easy Pumpkin Bread

"I got this recipe from...? You know I can't remember now! But, it was so easy and so tasty! My kids adore them, and they are picky eaters! I do hope you enjoy this recipe! (I used real pumpkin puree, but canned pumpkin will work just fine, too!)"

  • Preheat oven to 350°F.
  • Sift together flour, salt, sugar, and baking soda.
  • In a separate bowl combined pumpkin, oil, eggs, water, and spices.
  • Then, combined with dry ingredients but, do not mix too thoroughly. Stir in walnuts.
  • Pour into a well-buttered 9x5x3 inch loaf pan. Bake 50-60 minutes until a thin skewer poked in the very center of the loaf comes out clean. Turn out of the pan and let cool on a rack.
  • Makes one loaf. Can easily double the recipe.
  • If desired, you can use them in a muffin tin as well. They come out just as moist. If you use muffin tin bake for 20-25 minute.

  2. Many pumpkin bread recipes made 2 loaves and I only have 1 pan so I decided to try this recipe and don’t regret it. I used canola oil and 1/2 brown sugar 1/2 granulated sugar. Bake time is accurate. After slicing the bread I spread some butter on and sprinkled it w/ cinnamon sugar.
     
  3. Very good and easy. I didn't have allspice, so added 1/4 tsp ginger and 1/4 tsp ground cloves - also used both raisins and nuts. Great! This doubles perfectly, so you can make several of the little gift sized loaves for gift baskets.

After reading the reviews I made few changes, replaced the white flour with wheat, used brown sugar instead of white & replaced the oil with the same amount of unsweetened apple sauce, after all who needs the fat. Came out yummy. Thank you so much for sharing your recipe with us all.
     
  5. I prepared this easy recipe last night, and right after removing it from the oven, I had to leave. When I returned home (approximately 1hr later) all but one slice was gone!!! When I asked who ate all the bread, nobody knew anything, But my grandson sang like a bird! So I'm making another one now, because the slice I did eat was DELICIOUS!!!

Tweaks

  1. 1/2 brown sugar instead of all granulated
     
  2. Instead of mixing in the nuts, I topped the bread before baking with chopped walnuts and pepitas. It gave the bread a nice texture and a nice finish!
     
  3. This recipe is amazing! After reading reviews, I made a few adjustments. Instead of white sugar, I used brown. Instead of all purpose flour, I used wheat flour. I also used extra cinnamon and added a little vanilla extract. My bread came out moist and very delicious.
     
  4. I added milk instead of water. That way I didn't have to worry if I was over beating it or not.?? Also, instead of nuts I added raisins. Yumm... Loaf didn't last the night.
     
  5. No nutmeg or allspice or walnuts
