Super-Easy Spinach/Cheese Spaghetti Sauce

"A nice change from tomato sauce. We love this for a fast dinner. My girls (ages 2 and 5)like it as well and it's a good way for us to get them to eat some spinach! (You know, if you mix anything with cheese it tastes great)!"

directions

  • Cook first 4 ingredients for 10 minutes over medium heat.
  • (I sometimes add some minced garlic and cayenne pepper to this mixture).
  • Reduce heat to low and stir in remaining ingredients.
  • Heat but do not boil.
  • Serve on cooked pasta (spaghetti or whatever you have on hand).

  2. After seeing this as recipe of the day,I had to try it; been on a spinach kick anyway. Thinned with a little cream and served on angel hair pasta. Great veggie dish!!
     
  3. It was a rare and beautiful moment. I saw this as the recipe of the day, it sounded wonderful -- AND -- I knew I had all the ingredients on hand! I printed it and made it that night. I one-and-a-half timesed the amounts so there would be enough for my family, and perhaps a bit of leftovers for my lunch the next day. They devoured it and begged for more, complaining that I didn't make enough! Five stars all the way!
     
  4. What a GREAT dish!!I made this using only 1 Tbs. butter and fat free skim milk.This is wonderful.I did add the garlic and cayenne pepper to this as well and it made enough for me to take leftovers to work tomorrow.Very Good!!!
     
  5. This recipe is a delicious change from the usual cream sauces for pasta. What a great way to get some iron-rich spinach into one's diet. I doubled the recipe as well and served it over spaghetti and had no leftovers! yumm.....

I'm a high school music teacher, turned elementary music teacher, who is also a mom. My evenings are busy -- I teach piano and voice lessons one evening a week, direct the youth choir at our church on another night, and sing with a professional chamber choir here in Pittsburgh on yet another night, so I'm always looking for quick-fix meals. I love to bake too, much to the delight of my daughters, but not my husband, who loves sweets, but is very health-conscious! It would be great to have a week of free time to make all the delicious recipes I find here on 'Zaar. Not sure who I'd find to help me eat them, but I'd do it anyway!
