Super Healthy Zucchini Muffins

"Moist and heavy, these muffins are kind of bland (which is why I suggest adding mix-ins, like 1/2 cup raisins or pecans). To make them taste really good, frost them with vanilla frosting (although it makes them considerably less healthy)."

  • Beat the eggs until they are light and foamy.
  • Add sugar, applesauce, and zucchini.
  • Blend well with spoon.
  • Mix dry ingredients and add to egg mixture, blend well.
  • Add optional mix-ins.
  • Spoon into greased muffin tins.
  • Bake at 325°F for 20 minutes.
  • Enjoy!
