Ingredients Nutrition

  • 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
  • 2 (15 ounce) cans chili with beans
  • 2 cups colby-monterey jack cheese, shredded
  • 14 cup canned jalapeno slices
  • 14 cup sour cream

Directions

  1. Preheat oven to 425. Spray cookie sheet with cooking spray. Spread potatoes with onion on cooking sheet and bake 15-20 minutes until golden brown and crispy.
  2. While potatoes cook, place chili in microwave safe bowl and heat 4-6 minutes until hot and bubbly.
  3. Remove potatoes from oven and transfer to serving dish. Spoon chili over top. Sprinkle cheese over chili and potatoes. Garnish with jalapeño and sour cream.
