Super Rich Brownies (Vegan Option)

"I adapted this from one of my most favorite cookie recipes (#53301). I just always thought it would make a yummy brownie. This recipe doubles well, just use a 9x13 pan. Cook time may need adjustment."

  • 1 14 cups butter, softened (I use Earth Balance Buttery Sticks)
  • 1 cup sugar
  • 1 large egg (I use Ener-G egg replacer)
  • 1 teaspoon vanilla
  • 1 cup flour
  • 13 cup cocoa
  • 1 tablespoon cocoa
  • 12 teaspoon baking soda
  • 14 teaspoon salt
  • 1 cup semisweet chocolate chunk (optional)

  • Preheat oven to 350 degrees.
  • In a medium bowl, mix together the butter and sugar. Add the egg and vanilla.
  • Blend in the cocoa. Add baking soda and salt. Mix well.
  • Add flour to the creamed mixture and then add the chocolate chunks.
  • Pour into a greased 8x8 baking dish and bake for 25-30 min at 350 degrees.
