Super Tasty Super Messy Chicken Sandwich

"This is my own take on a Subway sandwich. It is now the most requested meal in our house . It is quick and easy. I have made small modifications and my husband now thinks it is the perfect sandwich. You can use premade marinara sauce, but I prefer to use "basic marinara sauce" by Diamond Joe (Recipe #268149) Prep time does not include making the marinara."

  • Pound the chicken breast until they are a uniform thickness.
  • Marinate the chicken in italian dressing for 1-4 hours.
  • "Pan fry" chicken unitl cooked through.
  • Heat the marinara sauce in a sauce pan.
  • Butter the inside of the ciabatta buns rub the garlic on the buns.
  • Place buns, buttered side up, under low broiler until lightly toasted.
  • Put a thin layer of the marinara sauce on the bottom half of the bun.
  • Add pepperoni.
  • Add chicken.
  • Add another thin layer of marinara.
  • Top with cheese.
  • Place back under the broiler until cheese melts.
  • If desired put a thin layer of marinara on the top half.
  • Enjoy -- don't forget the napkins!

  1. Already had leftover chicken, so added a little Italian dressing over it. I also used tomato paste, and maybe because the bread I have is smaller, used less of pretty much all of the ingredients. Tried one with fresh basil as well, and that was even better.
