Super Vegan Waffles

"My sister turned 22 today & I made these waffles up for her. They are super moist & very very yummy. Waffles are our traditional holiday/ birthday meal w/ 3 vegans & 3 die-hard not-vegans it has been tough to have a good breakfast for the last 7 years. I just perfected this recipe this morning & I can't wait to shock everyone with it this Christmas morning."

  • combine dry ingredients in medium bowl.
  • combine milk, vanilla, & ground flax seed in microwaveable container.
  • microwave on high for 1 minute.
  • blend wet ingredients & oil.
  • fold-in wet ingredients & dry ingredients.
  • cook on waffle iron.

  1. This recipe is AWESOME!!! No substitutes needed! I served these to picky waffle eaters and non-waffle eaters (yes there is such a thing!) and everyone loved them! I would make them everyday if I wasn't trying to watch my waist. <br/><br/>p.s. freezing extras and toasting them is good as well!
     
  2. I made these waffles for my kids this morning and based on the description by the recipe author, thought they would be good. They were not. I wish I would have read the first review and at least tried some of their substitutions.
     
  3. Awesome! We loved this waffle recipe. We tweaked it a little by using unbleached flour instead of whole wheat pastry, decreased the baking powder from 3 Tablespoons to 3 teaspoons and we omitted the nutmeg and opted for organic sugar. As for the wet ingredients we used rice milk. We then opted to use 1/4 c. melted butter and 2 Tbsp. coconut oil. THESE WERE DELICIOUS. Thanks so much for the recipe. It's not easy to find recipes with no eggs that taste great!

I am a single mother of a toddler. I have a BA in English and an MSW in Health, Mental Health, and Disability. I have been cooking and baking since I could unwrap a package of cream cheese (my Mom used to sell cheesecake to local dinner clubs and restaurants. I grew up eating food my mother prepared from scratch. Our meals were often eclectic: Ants Creeping in the Trees (a Chinese dish w/o ants), Mah Pose Bean Curd, Spinach Lasagna, Taco Salad, Burritos, Kasha, homemade yogurt, homemade cheese, and lots of other great stuff. Now, I have a family full of vegans and meat eaters. I tend to shy away from meat in my own diet, but that is only b/c I don't have a taste for it. I love to manipulate recipes and try to maximize nutrition in everything I make without compromising taste, texture, or quality. For years my favorite recipes have come from Bon Appetite, but now I am a die-hard Recipezaar fan.
