  1. In a Dutch oven or large kettle, cook potatoes in boiling salted water until tender.
  2. Cool completely; shred and place in a large bowl.
  3. Add 1 cup cheese and onion.
  4. Combine remaining ingredients; pour over potato mixture.
  5. Transfer to a greased 2-1/2-qt. baking dish.
  6. Sprinkle with remaining cheese.
  7. Bake, uncovered, at 350 degrees F for 35-40 minutes or until bubbly.
