Susan's Beefy Taco Pasta

"This is a quick, flavorful and filling weeknight meal that you can alter any way you want to suit your needs and it will still come out tasty! I created this meal one night when my husband was out of town and I thought I had a pizza in the freezer to feed the kids. 5:00 rolled around...and no pizza! So I scrambled to make something with ingredients on hand. You can use any kind of beans and can substitute canned diced tomatoes in place of salsa if you like this milder. The olives, jalapeno's, cilantro and cheese are recommended but are optional. Even my picky non-meat-eating son cleared his plate. I make this with a side of guacamole and chips and it's a VERY filling meal. This makes a thicker, drier sauce (which my family likes). If you wish a saucier version, either add more canned tomatoes or more salsa to your liking. Hope you enjoy!"

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet over medium heat, brown ground beef and drain. Add garlic, onion and crushed red peppers and saute until translucent and aromatic.
  • Add taco seasoning and mix well.
  • Add salsa and beans, olives and jalapeno's and warm through.
  • Season with salt and pepper and sprinkle on cilantro.
  • Combine all in large pot. Serve and add cheese to each individual bowl.

  1. My family and I really enjoyed this dish!! I added a can of corn for color. I probably would have used less pasta and maybe 1.25# of ground beef. Very good and filling

  3. Really good and easy to make. It tastes like chili mac. I left out the cilantro and didn't need the pepper. It turned out really spicy for some reason (a little too spicy for DH). I only used a pinch of red pepper flakes and I left out the jalapenos altogether because there was already a little jalapeno in my salsa. I used Recipe #59635 and it really doesn't taste very spicy to me on chips and my taco seasoning isn't very spicy either, but I use bulk taco seasoning and I think I put in a bit more than 1.25 oz, so maybe that was the problem. Maybe it was just the combination of that particular seasoning and salsa, so I'll try our usual store bought salsa next time. I'd also use a smaller can of olives and add a little more cheese next time just for personal taste. Thanks for sharing.
     
  4. Wow! This was so yummy I had it for breakfast the next morning. This was quick and simple. I ate it over pasta but I will try tortilla chips or tortilla's. This is your last minute meal that you will be impressed with the outcome. It's a keeper.
     
  5. this is delicious, I made as a take-home meal for my DS using a few additions, I used 2 small onions, used 2 teaspoons crushed chili flakes and omitted the cilantro, also I used cheddar cheese and increased the amount, this is nice and spicy with lots of flavor, just the way my DS likes it, thanks for sharing ChicagoRN, will make again soon!
