Suzanne's Avocado and Grapefruit Salad

2 salads
ingredients
- 1 ripe avocado
- 1 medium pink grapefruit
- 1 cup mixed salad green
- vinaigrette dressing, of your choice
directions
- Peel and pit the avocado.
- Slice lengthwise.
- Peel and section the grapefruit.
- Place the salad greens on 2 salad plates.
- Arrange grapefruit and avocado in an alternating band on top of the salad greens.
- Top with vinaigrette.

Nom nom! The creaminess of the avocado and the sharpness of the citrus. I've done variations: added mandarin orange sections, finely chopped red onion, poppy seeds across the top. Served on romaine for crunch or spinach for a thicker texture. Wow!~ -
Great recipe. I am so glad I found it as I was given some delicious ripe grapefruit and had some avocadoes that I had bought on sale. I would have never imagined to put the two together. Thanks for posting this recipe. -

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
