  1. Preheat wok over medium-heat.
  2. Heat oil until hot but not smoking.
  3. Add chicken and cook 4 to 5 minutes, or until no pink remains, stirring occasionally.
  4. Add ketchup, honey, pineapple and its juice, and red peppers.
  5. Cook 5 to 7 minutes, or until sauce begins to boil.
  6. In a small bowl, combine soy sauce and cornstarch; whisk well.
  7. When honey mixture is bubbling, add soy sauce and cornstarch mixture.
  8. Cook 2 to 3 more minutes, or until heated through and sauce has thickened.
  9. Add scallions and toss until well coated.
