  • In a small mixing bowl, whisk together orange juice, lemon juice, and pineapple juice from the can.
  • Add spices, whisk.
  • Add onions and pineapple tidbits.
  • In medium skillet, simmer sauce and chicken breasts on medium for 15-20 minutes, or until cooked through.
  • Serve over with brown rice.

  1. I substituted Mandarin oranges for pineapples/juice, and it worked out pretty well. It was good fresh out of the pan, but it was EXCELLENT the next day for leftovers after sitting in the juices for a while! Definitely trying this one again.

I have recently discovered a new way to eat:yeast free! I've been looking into Candida Diets (see http://www.theyeastdiet.com/ ) and I've been looking into new and interesting recipes to fit my lifestyle. The restrictions include: No Dairy (does not include eggs) No Sugar (of any kind) No Fruit No Chocolate No Coffee No Soy Sauce No Yeast So, that leaves me with any meat of my choosing, vegetables, water, green tea (no sugar), nuts, and grains. Fairly restricted, but I've been fortunate enough to have a decent idea of where I belong in the culinary world, so, this is where I plan to put a few of my recipes!
