“I had some pot roast left over, I threw some of my favorite ingredients in it and I created a great dish!! Now I make more roast than I need just so I can make these!! I have also used pork roast....but I cook that a little different than my roast. I'll post both recipes!”

Directions

  1. Mix barbecue sauce and 1/2 chipotle pepper (if you like it spicy add the whole pepper), heat over low heat.
  2. Add shredded roast, and simmer (you may need to add just a little water).
  3. In small bowl combine the other 1/2 to 1 whole chipotle, adobo sauce, orange marmalade and honey.
  4. Heat in microwave.
  5. Spoon a couple tablespoons of meat mixture in tortilla.
  6. Add cheese and drizzle with marmalade sauce.
  7. Heat for about 25 seconds in microwave.
  8. Top with lettuce, tomatoes, onion and cilantro if desired.
  9. I like mine with out any lettuce or tomatoes.
