Sweet and Spicy Soft Tacos

"I had some pot roast left over, I threw some of my favorite ingredients in it and I created a great dish!! Now I make more roast than I need just so I can make these!! I have also used pork roast....but I cook that a little different than my roast. I'll post both recipes!"

  • Mix barbecue sauce and 1/2 chipotle pepper (if you like it spicy add the whole pepper), heat over low heat.
  • Add shredded roast, and simmer (you may need to add just a little water).
  • In small bowl combine the other 1/2 to 1 whole chipotle, adobo sauce, orange marmalade and honey.
  • Heat in microwave.
  • Spoon a couple tablespoons of meat mixture in tortilla.
  • Add cheese and drizzle with marmalade sauce.
  • Heat for about 25 seconds in microwave.
  • Top with lettuce, tomatoes, onion and cilantro if desired.
  • I like mine with out any lettuce or tomatoes.
