Sweet and White Potatoes With Cilantro Cream

"I love the combination of the two kinds of potatoes and the sour cream with cilantro makes it so fresh tasting. A great summer recipe. And it is so easy and quick to make. A friend of mine made it a while ago. I think she found the recipe in a cookbook, but I have no idea which one. This is now one of my favorite side dishes and my kids love it too."

  • Preheat oven to 400°F; grease baking dish (11x7x1 1/2 inches).
  • Peel potatoes. Cut into 1/4 inch slices. Spread potatoes in baking dish.
  • Drizzle with butter and sprinkle with salt. Stir to coat.
  • Cover and bake 45 minutes or until tender.
  • Mix remaining ingredients. Spoon sour cream mixture over potatoes. Bake uncovered 5 minutes.
  • Tips: The original recipe called for margarine but I prefer butter. I usually leave out the chives but it still tastes delicious. Instead of a fresh chili you can use a 4oz can of green chilies (drained). Sometimes I double the sour cream mixture because we love it so much.

  1. Great recipe, DH loved it. I'm not a huge fan of the sour cream and chives flavor, so I thought it was good, but not much different from that. If you love sour cream and chives you will love this!
     
  2. Ideal for a gathering of friends, this was very much appreciated by mine!!! Very easily prepared, I used the chives, having plenty in my garden, but, I must confess, omitted the chilli, I wanted the youngsters to eat it! A different potato bake, I loved the combination of the two potatoes, definitely on my keepers list!

REALLY AN OUTSTANDING POTATO CASSEROLE, & for me, the inclusion of the sweet potatoes makes all the difference in the world, as did the cilantro cream sauce ~ In fact, I took your suggestion & doubled the sauce! One thing I didn't do, however, was to peel the potatoes ~ I like the taste & texture of the peeling so left the taters that way! Thanks for a wonderful keeper recipe!   4. Oh, yum!! Not sure I can add much more to what has already been said. I used the canned green chilies and felt the results could not have been better. I actually have a potato recipe that calls for white, red and sweet potatoes. It's been my potato recipe of choice for years....well, this one trumps it! So much flavor is added by the cilantro cream sauce....just loved it! Thank you for a terrific recipe.

I grew up in Germany but my background is German/Spanish/Irish/Native American. I would say my cooking style is a mix of all of them. I like to cook simple clean food. I usually don't use any packaged or processed products. Most of the time I make everything from scratch. I use only organic meat and dairy products and many other organic products and I believe it makes a big difference not only healthwise but also in taste. We have two kids. A 3 year old and a 9 year old. I try not to adapt the food for them too much. They are used to eating what we eat. Growing up I didn't really learn how to cook. At least I didn't care enough to remember anything.But living centrally in Germany I was able to travel and eat European food in it's respective Countries: Italian food in Italy, Spanish food in Spain, French food in France and so on. I really missed that when I moved to the States. I started cooking the week after I got married and have been cooking and teaching myself ever since. Now cooking is not only one of my two hobbies (photography being the other one)but I also see it as therapy. It calms me down after a stressful day, it cheers me up when I feel down and it helps me center my thoughts when I have a lot on my mind. :) Thank you so much to whoever gave me the gift of premium membership.
