Sweet Chilli Prawn Patties

"Delicious inclusion in a seafood platter, anti pasto or just as an entree/ starter. When I do this at home I use Chilli Wine jelly for the glazing, it comes from the Disaster Bay Chilli company in Eden NSW and is brilliant. If not from Australia substitute sweet chilli sauce for a similar taste"

  • Mince prawns in blender or food processor.
  • Add ginger, garlic, lemon grass, coriander and fish sauce and mix well.
  • Add egg and stir through.
  • Season to taste.
  • Check consistency and add flour as required to stiffen up mixture.
  • Make into small patties using 1 teaspoon of mixture at a time.
  • Refrigerate for 1 hour then pan fry or cook on bbq grill until golden.
  • Add sweet chille sauce and stir gently until sauce caramalises and adheres to patties.
  • Serve while hot.
