  1. Cut chicken in one inch cubes.
  2. Put skillet on high heat. Pour in 1 teaspoons olive oil. When skillet is hot, put in all pieces of chicken and let them sear for one to two minutes. Turn each piece and let them sear for one to two minutes. Turn each piece every one to two minutes until all sides are seared and the chicken is cooked thoroughly, careful not to burn the chicken.
  3. Cut blood orange in half.
  4. Season the chicken with salt and pepper, squeeze-in the juice of the blood oranges and throw in the squeezed orange halves. Toss the chicken pieces in the orange juice and cook for 1 minute. Drizzle in the maple syrup and toss the chicken. Continue to cook for another minute, then serve.
