  1. Peel and cube potatoes, boil for a few minutes.
  2. In a saucepan, combine lentils and broth, heat to boiling. Cover and reduce to medium-low heat, simmer until tender (about 15 minutes).
  3. Meanwhile, in a skillet heat oil and fry potatoes on high heat. Add cumin, shallots and coconut. Add a little bit of extra coconut. Cook 3 minutes. Add salt to taste.
  4. Mix it all together and top with bacon bits.
