Sweet Corn-Easy Freeze

The original recipe is from Jan of J&R Farms, one of the original vendors at the Northside Farmers Market on Sundays in Madison, Wisconsin. And it is of the type I love = KISS METHOD. ingredients

  • 14 cups raw corn, cut from cob (about 24 -30 ears)
  • 34 cup sugar
  • 7 cups water
  • 18 cup salt

  • Remove kernels from cob with a wide chefs knife. (30 min.).
  • Put into a large pot, ADD sugar and salt.
  • Add enough water to just cover corn, stir well and bring to a boil.
  • Boil 1 to 5 minutes and remove from heat.
  • Pour through a colander and reserve liquids. Place kernels onto cookie sheets to cool.
  • Scoop corn into date marked pint or quart freezer bags, include a small amount of reserved water in each bag.
  • Seal bags removing excess air, lay flat and freeze.
