Sweet Delicious Fat Free Blueberry Pie

ingredients
- 2 (15 ounce) cans blueberries
- 1⁄2 cup sugar (more or less according to your preference)
- 3 tablespoons cornstarch
- 2 tablespoons lemon juice (optional)
- 1 (9 inch) fat free pie crusts
directions
- Drain the berries and reserve the syrup from one can.
- In a saucepan, stir the syrup into the combined mixture of the cornstarch and half of the sugar.
- Cook over medium heat, stirring constantly until thickened.
- Remove from heat and gently stir in the remaining sugar, berries and lemon juice.
- Poor berry mixture into crust.
- Bake for 30 minutes or until filling is bubbly and crust is golden brown.

What can I say, I love to bake. I find it relaxing, but I don't feel like I'm just lying around, because I am actually doing something. I started baking a few years ago. Just making cookies and that kind of thing for my family, then I started baking more for the holidays and things like that. I love making things that are really good and everybody wants the recipe. I like to eat healthy so it always a challenge to find recipes that are relatively fat free, but that also taste good. I hope you enjoy some of the recipes that I have posted.
