Sweet Italian Sausage Bean Cabbage Soup

- 1 cup dried cannellini beans, soaked overnight and drained well
- 2 2⁄3 cups chicken broth
- 4 cups water
- 1 ham hock
- 2 onions, chopped
- 2 carrots, chopped
- 2 potatoes, unpeeled and cut into cubes
- 4 garlic cloves, minced
- 1 teaspoon parsley
- 1 teaspoon thyme
- 1⁄4 teaspoon pepper
- 1 lb sweet Italian sausage, pricked with a fork
- 1 small head of cabbage, shredded
- 1⁄2 teaspoon salt
directions
- Place the soaked beans in a saucepan and just cover with water. Bring the water to a boil.
- Reduce the heat to low, cover the pan and simmer for 30 minutes or until tender.
- Drain well and place in the crock pot.
- Pour the broth and water into the crock pot. Add the ham hock.
- Stir in the onions, carrots, potatoes and garlic. Add the parsley, thyme and pepper and stir.
- Cover and cook on low for 8 hours.
- Remove the ham hock. Remove the skin and discard and shred the meat off of the bone. Return the meat to the crock pot.
- Bring a large pan of water to a boil over high heat.
- Add the sausages and cook for 5 minutes. Stir in the cabbage and salt.
- Cook 10 minutes or until the sausage is cooked through.
- Drain the water off of the sausage and cabbage. Slice the sausage into 1/2 inch pieces.
- Place the sausage and cabbage into the crock pot.
- Heat on low for 30 minutes or until the sausage is heated through again.
