"This is a great summer salad. I was at a get-together and tried it there, and then promptly asked for the recipe. It is very easy to double or triple and adaptable to taste."

ingredients

2 cups macaroni
2 tomatoes (seeded and diced)
1 onion (diced)
¹⁄₂ green pepper (diced)
¹⁄₂ cucumber (seeded and diced)
SAUCE
²⁄₃ cup sugar
¹⁄₂ cup oil
¹⁄₃ cup vinegar
1 teaspoon salt
¹⁄₂ teaspoon pepper
1 teaspoon paprika

directions

Cook pasta.
Mix sauce ingredients and combine all together with pasta.
Chilling enhances the flavors, but is not necessary.
Prep time varies.

A great salad! I added 1/4 tsp dry mustard to the sauce. It gave it a little spirited kick!.I have to tell you, the flavors really penatrate the next day,just drain off any excess dressing that has settled on the bottom. This is a keeper of a recipe. Thanks for posting.

I made this recipe for our Labor Day picnic and it was a hit. I did not change or add a thing. It was a sweet substitute for the regular macaroni salad that I ALWAYS make for summer functions. This was a wonderful change. Thanks Housemom for the new recipe to add to my summer collection.
