Sweet 'n Sour Stuffed Cabbage Rolls ("golumbke")

- 1 head cabbage
- 4 tablespoons cider vinegar
- 2 lbs ground beef (chuck, uncooked)
- 3⁄4 cup raw long-grain rice, cooked
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 teaspoons white sugar, divided
- 3 large eggs, beaten
- 1 cup white onion, diced and divided
- 1⁄2 cup ketchup
- 1 cup celery, diced
- 1 cup carrot, diced
- 1 (29 ounce) can whole tomatoes
- 2 tablespoons brown sugar
- 8 gingersnap cookies, crushed
- 1⁄2 cup lemon juice
- salt and pepper
directions
- Core cabbage and separate leaves (about 18 leaves).
- Blanch cabbage leaves in boiling water to which 2 Tablespoons of vinegar has been added.
- Gently pour into colander to drain and rinse under cold water.
- Place beef in a large bowl.
- Add cooked rice, salt, pepper, 1 teaspoon of the white sugar, 1/2 teaspoon brown sugar, beaten eggs, 1/2 cup chopped onion and ketchup.
- Mix to combine.
- Place approximately 1/3 cup mixture on each cabbage leaf and roll up,tucking in sides and secure with toothpicks.
- Sprinkle diced carrots,remaining onions and celery on bottom of large casserole dish or baking pan.
- Place rolls on top of vegetables in pan.
- Coarsley chop tomatoes and pour in saucepan.
- Add rest of sugar, brown sugar, gingersnaps and lemon juice.
- Heat at slow simmer until sauce is heated through.
- Sauce should have a sweet and sour taste.
- Add more salt and pepper if you wish at this point.
- Pour sauce over cabbage rolls and cover baking pan.
- Bake at 350 degrees Fahrenheit for 2 hours.

Notes:
- This dish can be frozen before baking, then thawed and baked when needed.
- You could also divide this recipe and freeze half the rolls and sauce for another meal.

Because of the originality of using gingersnaps and the sauce flavor itself, I am giving this my highest rating. Having leftover filling does not detract from the originality of the recipe, and since the recipe clearly states salt and pepper can be adjusted and the recipe should have a sweet/sour flavor, my adding a bit more lemon juice, salt and pepper did not change the intent of the recipe. My head of cabbage was medium to smaller-sized, so if that is in the case next time, I will use two.

These tasty cabbage rolls worked very well for us. I made a half recipe exactly as written & DH esp liked them. I thought they might benefit from more salt & even some garlic. A truly good balance of sweet to sour is hard to achieve, but you hit it just right! Pls see my rating system. This is a very worthy 4*. Thx for sharing your creation w/us.

I've loved Zaar for many years and the great recipes I've found here. Back when I was working and the kids were little I was an okay cook who excelled only at a few family recipes. I began "surfing" on Zaar and started making so many wonderful fast and easy recipes. As they got older and I had more time, I began making more adventurous meals. When the kids were grown and I was no longer working, what started as a place to find new recipes turned into a community made up of varied and interesting people. After years as a "recipe surfer", I became a premium member in 2005 not only to start organizing recipes but also to participate even more in discussions, forum activities and having fun with new friends.

I've had vision problems plus a retina disease called retinopathy prematuria since birth, but never let it stop me until the last few years when I had to quit driving becauser of it. I moved from "sweet home Chicago" to rural San Diego County, CA, in 2004 when my husband of 35 years retired. Sadly, we are not near our children and beautiful grandchildren, who live in Florida, Minnesota and Arizona. Zaar has helped the transition from moving from the city to the country and becoming an empty nester confined to home a little more bearable.
I still love to read my grisly crime novels, play on the computer, and play blackjack at local casinos (within reason, of course??)
Even though my old friends tease that I'm a cross between a dirty old lady and a mother hen, Zaarites seem to bear with me. I think I love going to restaurants more because of reading the menus than eating the food. My best-friend says when I die I'm going to go to the big menu in the sky!
