- 1 cup broth
- 1⁄2 cup brown sugar, packed
- 1⁄3 cup cider vinegar
- 1⁄4 cup soy sauce (I use lite)
- 1⁄4 cup catsup
- 2 tablespoons cornstarch
- 3⁄4 cup carrot, cut up
- 2 tablespoons vegetable oil
- 3⁄4 cup bell pepper
- 3⁄4 cup celery
- 3⁄4 cup pineapple chunk
- 4 4 cups Spam or 4 cups pork
- onion, if you like
- Pam cooking spray
- hot cooked rice or chinese noodles
directions
- Combine first 6 ingredients in a saucepan. Cook over medium heat stirring until thickened. Remove from heat.
- Spray frying pan with Pam sauté carrots and celery (onion if you like) for 1 minute. Add bell pepper, pineapple and whatever; cook 5 minutes.
- Add sauce and cook until thoroughly heated.
- Serve over rice or Chinese noodles.
