Sweet Oranges Congo
"Traveling in ZWT, we find ourselves looking for exotic recipes but yet recipes we can make at home and will be eaten. This is the perfect recipe for a dessert for yourself, family, or special company. Simple to put together, minimal time frame, and it looks divine. Enjoy the sweetenss of oranges and cocoanut with a bit of a kick in the center. Adults preferred but sub in OJ if making for children Adopted from the Univ of Penn African recipe collection"

- Blend all together.
- Divide 1 cup MOIST SHREDDED COCONUT into 8 dessert sauce dishes (2 Tbs. or 1 oz. each).
- Make a hole in the center of the coconut so that it forms a rim.
- Fill centers with ORANGES CONGO, dividing above mixture evenly.
- Add more brandy or orange juice if the mixture is not moist enough.

NOTE:
- Set in the reridgerator to cool but this is not neccessary. Needed time for "cooking" in the recipe format here.
- OPTIONAL:If you need a dessert in a hurry, prepare this dessert with canned mandarin oranges.
- OPTIONAL: Another variation is to stuff baked apples with the above mixture when they are about half done.

Hi Connie, I'm not quite understanding this process. Are you cooking the orange/date/peanut mixture before adding to the dishes? (You talk about cooling it). And you peel the orange before cooking the squares? Thanks

DH and I traveled across country several times and our children are seasoned travelers as well. Road Trip are 2 of my favorite words. The kids and I have done a few trips as well down the eastern seaboard and there are plans for more. Both DD and DS are gypsies as well and think nothing of taking a road trip to visit home or each other. LOVE IT <br /><br />I live in Western New York and love it here, snow and all. I am a special education teacher and enjoy my career. The sense of wonder and gratification comes daily. My favorite pastime is spending time with my family! I also love to read, listen to music and watch good movies. We have Friday night pizza night here, which means I do not cook! I love Friday's. I started this custom when my children were small and we would cuddle on the floor and play games together and eat pizza. (Highly recommended for all moms out there, dads too.)
