Sweet Pickle Chicken Salad

  • Place pickle juice and onion in blender or food processor.
  • Process until finely chopped.
  • Add chicken and process 3 fast pulses.
  • Add remaining ingredients and process 2 fast pulses.

  1. This has promise for us. I gave it three stars b/c the pickle juice made it really runny, but the flavour was excellent. It could have had the same flavour with less pickle juice and more pickle chunks.<br/><br/>I used sweet pickle juice, but also added coarsely chopped pickle chunks. I prefer a chunkier chicken salad and processed it too long in my FP. Next time I will pulse or just pull apart on my own. <br/><br/>Very tasty and will make again with a few adjustments. Nothing flavour-wise - all for texture.

I can see this being used to stuff eggs for a chicken salad deviled egg dish. I will be having this for many lunches in the future. Thanks for posting this recipe!!
     
  4. This was very good. I usually like to get the chicken salad at Sam's Club and this is just as good as that. Plus it cost alot less to make it myself too! :D
     
  5. It is very tasty and is easy to make. I substituted green onion and sweet pickle relish. When I chopped it in the blender it turned out in a paste like consistency. I gave my husband a taste and he decided to have it for dinner :)
