This has promise for us. I gave it three stars b/c the pickle juice made it really runny, but the flavour was excellent. It could have had the same flavour with less pickle juice and more pickle chunks.

I used sweet pickle juice, but also added coarsely chopped pickle chunks. I prefer a chunkier chicken salad and processed it too long in my FP. Next time I will pulse or just pull apart on my own.

Very tasty and will make again with a few adjustments. Nothing flavour-wise - all for texture.

Very easy to make. Had leftover chicken and decided to give this a try. I am glad I did. I also used sweet pickle relish instead of pickle juice. I like the chunkiness of the pickle pieces. I can see this being used to stuff eggs for a chicken salad deviled egg dish. I will be having this for many lunches in the future. Thanks for posting this recipe!!
