  • Sweat onion with butter over medium heat.
  • Add sweet potato; cook for a few minutes.
  • Add salt and pepper to draw out the moisture for sweating.
  • Add water; cover and bring to a boil.
  • Reduce heat and simmer for 10 minutes.Add corn, cover and simmer until the potatoes are cooked and tender. (A knife will easily glide through the potatoes. If not, continue cooking.).
  • Blitz the mixture with the aid of a hand blender. (Or use a blender if you don’t own a hand blender or like messy cleanups.).
  • Strain the mixture through a fine chinois. (Skip this step if you want… I just like smooth and silky.).
  • Ladle up the soup and serve to your adoring family.

  1. As often as possible I don't peel potatoes when I prepare them, & I didn't here, but rather diced them small so the pieces of peel weren't very large! Went on from there, & mashed probably 3/4 of the chowder a much as possible, then put it all together for a nice, chunky chowder! Absolutely wonderful in the taste department, & something I'll be making again, for sure! [Made & reviewed in Zaar Chef Alphabet Soup tag]
     
  2. Just made this and the whole family loved it!! The only problem is that I didn't double it. We ate it all in a sitting (2 adults, 2 teen girls). I added a bunch of pepper to mine, and broke up saltines on top of the soup. Yum. I used a very large sweet potato and 4 oz of corn. I'll use a little less corn next time. I used a blender because I don't have a working hand blender. If I double it, it won't fit...I'll think about that next time :)
