Sweet Potato and Ginger Slaw Times 2

"This was printed in my local newspaper and I gave it a try. A very different way to serve sweet potatoes and so delicious. The great joy in this recipe is it gives you a variation for day one and then on day 2 you can dress it up a little differently and enjoy once again."

  • In a large bowl, whisk together the oilive oil, lime juice, sugar, ginger and salt until combined.
  • Add the grated sweet potatoes, nuts and scallions; reserve approximately 2 cups of the mixture for day 2 variation and serve the remainder in the lettuce leaf cups.
  • Day 2: In a medium size bowl, toss together the reserved sweet potato slaw with the chicken, hoisin sauce and seasame oil; serve over a bed of mixed greens.
  • The recipe serves 8, 4 on day 1 and 4 on day 2.

  1. Day 2 was a big hit and day 1 was good, too. The 1.5 pounds of sweet potatoes (3 medium) made a lot. I would cut back to 1 pound (2 sweet potatoes) next time. Thanks for two new healthy and easy meals.

  3. This was a great recipe. I added just a bit of extra dressing on day one and my husband loved it. I liked day two even more than day one. (Although we discovered that the hubs doesn't care for hoisin . :-/ ) I would say that my best advice is to take it easy with this recipe to make sure that your digestive system is really prepared to handle that much raw potato.
     
  4. This made a terrific lunch. I have to admit I went straight to day 2. I had no idea you could eat sweet potatoes raw! This opens up a whole new world for me. The salad was both tangy and sweet.

So much flavor. I will be making this for other salads as well, can't wait to try it on fruit salad.<br/><br/>Day 2 was just as good as day 1. The only change to your recipe was to use savory pork tenderloin in place of the chicken. What a treat, I can't wait to make this again. Thank you so much for posting this treasure.

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called. Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com. Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net. Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
