  1. Saute chopped onion, leek and sgae in olive oil for a few minutes until golden.
  2. Add carrot and sweet potato cut into cubes and saute for 2 minutes.
  3. Add hot stock.
  4. Simmer for 45 minutes.
  5. Add parsley.
  6. Blend soup.
