ingredients
- 1 cup sweet potato, cooked and mashed smooth
- 1⁄2 cup butter
- 2 cups flour
- 1 tablespoon baking powder
- 3⁄4 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 3 tablespoons brown sugar
- 2⁄3 cup buttermilk
directions
- Preheat oven to 425 º.
- With sweet potatoes in a large bowl, add butter a little at a time untl well blended.
- Put flour, baking powder, salt, baking soda and cinnamon into a medium-sized bowl.
- Stir brown sugar through a strainer into flour mixture.
- Stir until blended.
- Stir flour mixture into sweet potato mixture in 3 additions alternatively with buttermilk, just until well blended.
- Form into a ball and sprinkle some flour on top.
- Roll dough to 1/2 inch to 3/4 inch thickness.
- Cut with a 2-inch round cutter.
- Bake on cookie sheet 15 to 20 minutes.
