Sweet Potato Biscuits

"These are delicious anytime, but most especially with Thanksgiving dinner. This is a recipe I hand wrote so many years ago I can't remember who gave it to me, but these sweet potato biscuits are very good."

  • Preheat oven to 425 º.
  • With sweet potatoes in a large bowl, add butter a little at a time untl well blended.
  • Put flour, baking powder, salt, baking soda and cinnamon into a medium-sized bowl.
  • Stir brown sugar through a strainer into flour mixture.
  • Stir until blended.
  • Stir flour mixture into sweet potato mixture in 3 additions alternatively with buttermilk, just until well blended.
  • Form into a ball and sprinkle some flour on top.
  • Roll dough to 1/2 inch to 3/4 inch thickness.
  • Cut with a 2-inch round cutter.
  • Bake on cookie sheet 15 to 20 minutes.
