  1. Preheat oven to 400. Scrub sweet potatoes and trim ends. Cut into ¼ inch rounds.
  2. Oil a jelly roll pan and arrange sweet potatoes in a single layer. Brush with oil.
  3. Bake 15 minutes or until slices are golden brown on the bottom. Turn over and cook 10 minute longer.
  4. Transfer potato slices to a serving plate and spoon or pipe about ½ teaspoon sour cream onto each.
  5. Top with 1 or more toppings. Serve hot, warm or at room temperature.
