  • Preheat oven or grill to 400 degrees.
  • Using a very sharp knife or a mandolin, slice the sweet potatoes into very thin rounds.
  • Drizzle slices with olive oil and sprinkle with salt and pepper. Toss to coat.
  • Lay slices in a single layer on a baking sheet and place in the oven, or lay on a sheet of foil on top of the grill.
  • Cook about 20 minutes, turning halfway through cooking, until crispy.
