  • Cook bacon in heavy-bottomed pot over medium heat until slightly crispy. Add onions and cook for 2-3 minutes.
  • Add sweet potato and peppers and cook for minutes more.
  • Add garlic and spiced and continue to saute until garlic is fragrant, 1-2 minutes.
  • Sprinkle flour over vegetable mixture and cook, stirring constantly, for 2 more minutes. Add corn.
  • Deglaze pan with vegetable stock, bring to a boil and then lower to a simmer. Cover and cook for 20 minutes, or until vegetables are soft.
  • Stir in milk and let simmer 2-3 minutes until thickened and warmed through. Serve with a sprinkling of cotija cheese.
