- 1 medium sweet potato, peeled and grated
- 6 eggs
- 4 ounces cooked salmon, crumbled
- 1⁄2 cup milk
- 1⁄2 mozzarella cheese, grated
- 2 garlic cloves, minced
- 1 teaspoon dill
- 1 teaspoon basil
- 1 cup spinach, chopped
directions
- preheat oven to 350F.
- whisk eggs with milk and herbs, add salt and pepper to taste.
- combine with the rest of the ingrediants.
- pour into a greased 8x8 pan.
- bake for 50 minutes.
- allow to set for a few minutes, then flip it out by putting a cutting board on top of the pan and turning it over.
