  1. Peel baked or boiled potatoes and mash well.
  2. Lightly beat eggs.
  3. Mix wet ingredients together until well mixed.
  4. If desired, grind oats in the food processor until a course flour.
  5. Mix together dry ingredients.
  6. Add dry to wet and stir by hand just until mixed (do not over-beat).
  7. Heat griddle until a few drops of water "dance" on the hot surface.
  8. Pour batter onto the griddle. If batter is thick, use the back of a spoon or ladle to spread out.
  9. Turn when bubbles form and pop, and top looks dry.
  10. Serve with applesauce or syrup.
