Ingredients Nutrition

  • 1 frozen pie crust (or pastry dough recipe for a 9-inch dish)
  • 2 cups mashed cooked sweet potatoes, cooled slightly
  • 2 eggs, well beaten
  • 1 14 cups milk or 1 14 cups non-dairy coffee creamer or 1 14 cups soymilk
  • 14 cup sugar
  • 12 teaspoon salt
  • 12 teaspoon cinnamon
  • 12 teaspoon nutmeg
  • 2 tablespoons rum
  • 4 tablespoons butter or 4 tablespoons margarine, melted and slightly cooled

Directions

  1. Preheat the oven to 425.
  2. Combine all the ingredients in a large bowl and mix until well blended and there are no lumps.
  3. Pour into piecrust and sprinkle with additional cinnamon, if desired.
  4. Bake for 10 minutes and then reduce the oven temperature to 300.
  5. Bake for another 50 minutes or until the filling is firm.
