  2. Combine dry ingredients together, set aside. Whisk eggs and blend in dry ingredients. Stir in sweet potatoes, then milk.
  3. Pour into pastry lined pie pan. Bake at 425°F for 10 minutes. Reduce heat to 350 °F and bake for 40 more minutes. Remove from heat, cool and refrigerate before serving. Serve cold with fresh whipped cream -- or maybe not!
  4. Note: Flavors intensify after 1-2 days in the refrigerator. Pie can be made up to a week in advance.
