Sweet Potato Pound Cake

"I can't remember where this recipe came from but I have been making it for years. I just love it. I have also tried baking this in a metal coffee can. Adding walnuts to this is also an option but I usually leave then out. It makes two (large) loaves."

  • Preheat oven to 350 degrees.
  • Grease and dust with flour two 8 1/2 x 4 1/2 x 2 5/8 (larger) loaf pans.
  • Mix flour, baking powder, baking soda, nutmeg, mace, and cinnamon in a medium sized bowl.
  • In a large bowl, beat at high speed with electric mixer, unsalted butter, granulated sugar and brown sugar until light and fluffy.
  • At low speed, add sweet potato and eggs one at a time until well mixed.
  • Beat flour mixture into the sweet potato mixture.
  • Add vanilla and mix.
  • Pour batter equally divided into 2 loaf pans.
  • Bake for approximately 55 minutes.
  • Serve warm or cold and can be frozen.
  • Enjoy!

  1. wonderful pound cake that welcomed guests for our thanksgiving weekend! my husband requested another, but suggested an icing with the next. I used a bundt pan so it took a little longer.
     
  2. This cake is amazing. I used some sweet potatoes from my garden in it. Its a perfect cake.
     
  3. The cake was delicious! I made some minor changes, I used 1 cup white sugar and1 cup brown sugar. I sifted the flour, and used 3 tsp cinnamon, and 1/2 tsp nutmeg. It was very moist and delicious, my husband loved it, it's definitely a keeper. I think next time I will add walnuts.
     
  4. I deliver meals on wheels to housebound senior citizens. A southern gentleman on the route asked if I'd make him sweet potato cake. That was totally foreign food to me, but thanks to this recipe, I sure did make an old man happy. Just as he remembered and it certainly made his day. I made two loaves and kept one. Now we know why sweet potato cake is one of his favorites--very tasty indeed. Thanks, BlueBonnet, for making us all happy.

I am originally from Long Island, NY. I miss the food there. I miss bagels, pizza , crisp italian bread , a Sabrett hot dog, half sour pickles ,Italian pastries, a knish, and the Mets...forgetaboutit!! But now I live in Texas. North of Houston. I've had my fare share of Mexican food. The pizza is horrible and what is up with the Chinese take out food? You can't get a pint or a quart. Its one size only and its expensive. The best places I lived: Virginia, Okinawa, Japan and Mechanicsburg, Pa. The worst place I lived: a tie between Keflavik, Iceland and Alabama. Favorite vacation: Cancun & Italy.
