"On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share"

  • Peel and cook the sweet potatoes until fork tender.
  • Combine 2 C coconut and cream in a saucepan, bring to a boil, remove from heat.Soak for 30 min, Press all liquid from coconut, discard pulp.
  • Mash sweet potatoes.
  • In the mixer, combine cream and sugar and beat until well mixed.
  • Add sweet potatoes and mix until all lumps are gone and the consistency is light and fluffy.
  • Fold in soaked coconut, blend well.
  • Pour sweet potatoes in a greased 9x9 casserole.
  • Bake at 400*for 15 minutes.
  • Saute remaing coconut and sprinkle over top.
