Sweet Potato - Raisin Patties

ingredients
- 4 medium sweet potatoes
- 1 egg
- 1⁄3 teaspoon salt
- 3 tablespoons flour, if needed
- 1⁄2 cup raisins
directions
- Mash sweetpotatoes.
- Beat in egg and salt.
- Add flour only if potatoes are wet.
- Mix in rasins.
- Drop mixture from a tablespoon on heated, greased fry pan.
- Brown slowly on both sides.

Originally I was gonna make this for a breakfast, but it ended up being made in the late morning, & was great for lunch & as snacks later on! Very nice tasting treats, however they're served, but then, I'm a big fan of both raisins & sweet potatoes, so . . . Thanks for sharing the recipe! [Made & reviewed in Bargain Basement tag]
