  • Cook the potatoes in a pot of boiling water for 12 to 15 minutes or till fork tender. Drain well and place in a large bowl.
  • In a small bowl, combine remaining ingredients. Pour over the sweet potatoes and mix. Chill before serving.

  1. Delicious! What a great idea. I think next time I'll cut back on the honey, because the sweet potato was pretty sweet on it's own. Great idea for a barbecue or picnic. I roasted the sweet potatoes the night before, rather than boiling them, it gives them such a lovely taste. Thanks Nemokitty!

I made a couple of incidental changes when I put this salad together ~ I left the peel on the potatoes & after they were cooked I diced them kinda small, AND instead of the cup of mayo, I used half a cup of low-fat yogurt & half a cup of low-fat mayo! We still had a great tasting salad & absolutely loved this sweet potato recipe! Thanks for sharing it! [Made & reviewed in Newest Zaar recipe tag]
