Sweet Potato Waffles

"Sweet potato gives these waffles a nice golden peach color and wonderful flavour. They are crispy on the outside and soft in the inside. Sweet potatoes provide almost half the recommened daily allowance of Vitamin C and two to five times the recommened amount of Beta Carotene!"

  • In large bowl, mix together flour, baking powder and spices.
  • In seperate bowl, whisk together egg yolks, milk, sweet potato, oil and orange rind.
  • Pour wet ingredients over dry ingredients, stir together until just moistened.
  • In a bowl with electric mixer, beat egg whites until soft peaks form; add sugar, beat until stiff peaks form.
  • Fold into batter; pour batter onto a heated nonstick lightly greased waffle iron.
  • Cook until golden brown until waffle iron stops steaming, about 5 minutes.
  • Yield 12 waffles.
  • NOTE: These waffles freeze well; After freezing, just microwave them for about 30 seconds and pop them briefly into the toaster.

  1. I just got a new Belgium waffle maker and went in search of some recipes to try it out. I printed off five (out of over 900 posted here!). My husband said this one sounded the most interesting, so I tried it first. Yummmm! And they're a healthy version too. If you are used to using a boxed mix, this may seem like a lot of work. But it goes together pretty quick and is well worth the effort. Thanks so much for sharing. This one goes in my best loved file!

  3. These waffles are keepers in my book! Great tasting and even the most picky eater will eat them! My roomate has two picky eaters 8 & 10. They love these, and they have no clue they are good for them. It is my little secret!
     
  4. VERY GOOD. . for gluten free + lactose /sugar intolerant family - I used 1 c. gluten free flour \ + all purpose flour - - 1 tBS Stevia (to replace sugar) - 1/2 c. of water sweet potato cooked in + lactose free "milk" to make 1 1/2 c liquid - 2 TBS olive oil + 1 TBS Canola oil
     
  5. Yum yum yum!!! My kids loved these, and I love that they're getting veggies in their breakfast. The orange zest totally makes them amazing.

I am pesco-vegetarian as I do not want animals to suffer for my consumption. I also love to be active in individual sports and train year round for triathlon. I am both an active racer and volunteer. The distance I prefer most is the Sprint distance - 750m swim, 20km bike, 5km run. This upcoming race season marks my 16th year of participating in triathlon. I love it just as much, if not more, than I did 16 years ago!! I also have a newfound love for Iyengar yoga. I have a profound love for animals and the pretty little kitty you see as my icon is my 16 1/2 year old cat Snuggles. Sadly, Snug passed away in March 2006, and is dearly, dearly missed.
