4 medium sweet potatoes
1 tablespoon pure maple syrup
¹⁄₄ cup orange juice concentrate
¹⁄₄ teaspoon orange zest, minced
1 teaspoon dried thyme
¹⁄₄ cup bacon, cooked, crumbled (I use Hormel's Real Bacon Pieces)

directions

Preheat the oven to 350 degrees F.
Scrub & wash the sweet potatoes then cut each in half across the middle.
Julienne the potatoes, then place in a microwave proof dish, cover, & microwave on high for 4 minutes.
In a small bowl, blend together the syrup, juice concentrate, zest & thyme.
Put the microwaved sweet potatoes in a glass baking dish & toss them with the syrup mixture.
Spray the top with a nonstick baking spray, then bake for 20 minutes.
When done, sprinkle the crumbled bacon over the top of the orange sweet potatoes & serve.
