- 2 cups pumpkin (grated)
- 1⁄4 cup walnuts (chopped)
- 1⁄4 cup raisins
- 1⁄4 cup sugar
- 1 teaspoon cinnamon
- 1⁄4 teaspoon clove
- 1⁄2 teaspoon mace
- 1⁄2 teaspoon orange zest
- 1⁄2 cup flour
- 1 egg
- 2 tablespoons oil
Directions
- Mix the pumpkin, walnuts, raisins, sugar, spices, flour and egg in a bowl.
- Heat the oil in a pan.
- Spoon the pumpkin mixture into the pan and cook until golden brown on both sides, about 4 minutes per side.
