  • Cut peppers and courgettes into strips.
  • Put in dish with mixture of remaining ingredients.
  • Cook in oven for 45 mins- 1hr, turning every so often to coat the vegetables.

  1. Delicious! I made these with three red peppers (personal taste preference) but if I were making this dish for a dinner party, I’d definitely go with the idea of using different coloured peppers, for the visual effect. I used freshly ground black pepper (all I ever use) instead of white pepper, and I added six cloves of garlic, halved, instead of using garlic powder. I loved the combination of the honey and the soy sauce, and the fact that this was a very healthy, low-fat dish was an added bonus. Thank you, alizaweeza, for a fabulous recipe: everyone loved it and I’ll be making this one again and again. I’m going to use the leftovers in rye bread sandwiches.
