- 12 shallots, peeled
- 2 teaspoons olive oil
- 2 teaspoons brown sugar
- 2 sprigs thyme or 2 sprigs rosemary
- 1 teaspoon parmesan cheese
- 7 ounces linguine
- 8 ounces ricotta cheese
- salt and pepper
directions
- Halve the shallots and cook in a little oil for about 5 minutes.
- Add the brown sugar and thyme and keep cooking and stirring until the shallots are tender and caramelized.
- Cook the linguine to packet instructions then tip into the pan.
- Add the shallots, salt and pepper and toss.
- Divide into bowls then add ricotta in blobs and sprinkle on the parmesan.
