Sweet & Smoky Paprika Chicken Chili-Slow Cooker

  • Allow red chiles and prunes to steep in 2 cups boiling water for 15-20mins. Strain and reserve water. Set aside for future use.
  • In medium sauce pan, sautee onion and minced garlic on low until tender. Add smoked paprika and cook for 1-2mins.
  • In a food processor, puree chiles, prunes, 1/2 the sauteed onion/garlic/paprika mixture, tomato paste and 1-14.5oz can crushed fire-roasted tomatoes.
  • To crockpot add water reserve, onion reserve, puree, bacon, chicken, kidney beans, pepper, salt, Extra Spicy Mrs. Dash and brown sugar. Stir; cook on high, 4 hours and ENJOY w/pepperjack cheese, sourcream or cornbread!

  1. Every now and again, I see a recipe that I just have to try because of an interesting combination of ingredients. I will be 40 this year, and I have never tried a prune. That, coupled with the sweet and the spicy (and the bacon!), I couldn't resist giving this a try. Personally, I give it 5 stars. But DD and DH said 4. I followed the recipe ALMOST exactly. I cut the bacon in chunks and cooked it, then drained off all but a Tbsp of the grease to saute with. And last night at the store, I couldn't find smoked paprika. Just the same old sweet paprika I had at home already. Happened across a substitution in a Rachael Ray recipe, for 2 teaspoons smoked paprika (or substitute a mix of 2 teaspoons cumin, 1 teaspoon sweet paprika and 2 pinches cayenne pepper). What a great combination of sweet and smoky and then some spice to round it out. I served with my jalapeno-habanero cheese bread. This is definitely going into my saved file, and I'll pull it out again when the two older DD's come home from college. Thank you for sharing this one!

My favorite cookbook is the ever trusted Better Homes and Gardens Cook Book stuffed in the shelves in of every womans kitchen for nearly 100yrs. I borrowed it from a friend-needless to say, I kept the cookbook and ditched the friend! LOL Baking is NOT my forte, however, after 20yrs in the torture chamber, I'm proud to say that I CAN bake a mean chocolate chip cookie and some fabulous breads during the holidays!
