Directions

  1. Saute onion, yam, garlic, celery in olive oil.
  2. When translucent, add chicken stock and bay leaf.
  3. Simmer for about 20 minutes.
  4. Puree with stick blender.
  5. Simmer for about 10 minutes.
  6. Remove bay leaf,.
  7. Add beans, spinach and pepper.
  8. Simmer 5 minutes.
  9. Enjoy!
